The MaxSignal® Histamine Enzymatic Assay Kit for Fish Sauce is a colorimetric enzymatic assay for the determination of histamine in fish sauce samples. Histamine is a contaminant sometimes found in fish sauce. High levels of histamine can cause a severe allergic reaction (scombroid poisoning). The amount of histamine can be determined using ELISA or LC-MS. However these traditional methods require expensive instrumentation and time consuming sample preparation procedures.
