Sulfite Assay Kit with Cuvette and Microplate Formats for Rapid Sulfite Determination in Wine, Beer, Dried Fruit, Jam and Fruit Juices

The MaxSignal® Sulfite Assay Kit is a spectrophotometric enzymatic assay for detection of sulfite in wine, beer, dried fruit, jam, and fruit juice matrices for low-interference analysis. This kit incorporates an innovative new format which offers more accurate results when testing problematic, “high-creep” samples.

The kit components detect the presence of total sulfite (measured as SO2) in a test sample. Sulfites are most often used as antimicrobial and antioxidant agents in food and beverages, particularly in wine-making during the fermentation process. Sulfites can exist in a variety of forms at various pH, which combined represent the total sulfite content.

Due to potential adverse reactions of intolerant individuals and other safety concerns, total sulfite content is commonly regulated by governmental agencies to ensure that foodstuffs above 10 ppm are labeled properly and do not exceed maximum allowable limits depending on food type. With high sensitivity and a low detection limit, this kit provides the ability to quickly identify the presence of sulfites in the most common varieties of sulfite-containing items, utilizing a sequential two-enzyme reaction.

The MaxSignal Sulfite Assay Kit uses a successive enzymatic reaction scheme to measure sulfite in samples. Sulfite oxidase first degrades sulfite into sulfate and hydrogen peroxide (H2O2). Hydrogen peroxide is utilized as a substrate by NADH peroxidase to oxidize NADH chromophore into NAD+ product. This conversion, measured at 340 nm, allows convenient visible detection via a common laboratory spectrophotometer. The change in absorbance is proportional to the amount of sulfite present in the sample.


Sulfite Detection in Meat and Milk Samples

The MaxSignal® Sulfite Assay Reagent Pack – Meat and Dairy is a set of additional reagents designed to be used with the MaxSignal Sulfite Assay for preparation of meat and dairy samples. This reagent pack offers a rapid aqueous extraction method for meeting 10 ppm sulfite concentration requirements with low-interference analysis.

This kit is manufactured to the international quality standard ISO 9001:2008.


Kit Specs

The MaxSignal Sulfite Assay Kit has the capacity for 50 sample determinations in the cuvette (or 192 determinations in a microtiter plate). Unless otherwise noted, all unused kit components may be stored for 6 months at -20°C. 

The MaxSignal Sulfite Assay Reagent Pack – Meat and Dairy has the capacity for 25 sample preparations for cuvette format (or 100 determinations for a microtiter plate), including 25 negative controls for cuvette. Unless otherwise noted, all unused kit components may be stored for 1 year at room temperature (20 – 25°C). Items may be stored at colder temperatures without adverse effects, but should not be stored at warmer temperatures or shelf life will shorten.
